This is a blended learning programme, delivered over a 10-month period. Face to face modules will be delivered as a full day workshop and skill builder sessions will be delivered via 1–2-hour webinars or Teams Calls. There will also be suggested reading resources, e-learning and 121 coaching available in addition to experiential activities that can be completed within location or in a regional capacity. Completion of the programme will be acknowledged during a graduation event and learnings from the programme will be captured to make improvements for the next cohort.
Modules include: Orientation Basic Cookery Supplier/Producer Site Visit Bakery Finance & Nutrition Health & Safety & Coaching Skills Practical Cookery with Mark Moriarty Foraging Menu Design/ Marketing Master Chef with Graduation.
Learning outcomes for each module will vary but overall this course will develop chefs in all areas of the kitchen bringing practical culinary expertise, kitchen management, kitchen leadership and modern team dynamics into the spotlight. It has also been designed to bring a heightened self awareness allowing our teams to grow in confidence, purpose and stature.
